Honest Carbonara

70g bacon

200g spaghetti

Fistful of sea salt

3 eggs

3 cloves garlic

1-2 tablespoons parmesan cheese

1 tablespoon butter

1 tablespoon olive oil

 

- cut bacon into whatever size you want. just remember it shrinks when you cook it. Mince two cloves of garlic. slice one

 

- In a large pot, boil water on high heat

 

- while waiting, separate egg yolks and white into two bowls. Add 1-2 tablespoons of parmesan cheese into york bowl.

Mix.  Add tablespoon of butter to yolk mixture. NO need to melt it.

** Optional : egg whites can be used to make scrambled eggs later.

 

- Add pasta to boiling water for however long it tells you to

 

- Turn pan heat on high. Dump in bacon. No need to add oil. Stir often. When bacon is slightly crisp, turn heat down to medium.

Add a tablespoon of olive oil.

Throw in garlic. Stir and toss once or twice a minute. When garlic slices start to brown , turn down heat to midium-low.

Continue to stir or toss

 

- When pasta is ready, make sure you save half a cup of pasta water before draining and dumping pasta into the pan.

You can add this to your pasta if it becomes too dry later.

Toss pasta in pan for about a minute.

 

- Turn off heat. Add yolk mixture. Mix and toss for about a minute. Do not scramble.

** Optional: Add parsley and additional parmesan cheese. Add salt and pepper to taste.
